Dierks Bentley Readies Bluegrass Album, Due This Summer

 

Dierks Bentley has titled his forthcoming bluegrass album Up On The Ridge.  The project will feature appearances by Miranda Lambert, Alison Krauss, and the Del McCoury Band among others.

“I didn’t want this to be ‘Dierks Bentley and friends’ or a ‘Dierks does bluegrass’ kind of album… I wanted each song to have something special about it, and I think each song does have its own thing going on,” said Bentley.

Up On The Ridge is due out this summer.

People Magazine is reporting that Rascal Flatts‘ Joe Don Rooney and his wife Tiffany Fallon are expecting their second child!

“We’re a little more prepared but the same excitement is there,” Rooney says. “There’s such fulfillment in being a father and it’s going to be two-fold now, which is so cool.”

Miranda Lambert tells OK! Magazine that when she and Blake Shelton have a fight, he knows just what to bring her to make up. She says, "I love Cheetos, but I try not to eat those, so I usually go with a 100-calorie pack of Cheetos, which aren't near as good. Every time if I've ever had a fight with a boyfriend or anything they always bring me Cheetos to make up... It's just the way to my heart." Miranda also talks about style and what she likes to see her boyfriend wear. She shares, "Well, I learned I'd better like plaid, because that's what he's gonna wear... plaid shirts, Wranglers and boots. That's what I like him in. You always know it's him. He's definitely who he is in his style, and doesn't care if people like it."

Zac Brown Band will release Pass The Jar – Zac Brown Band and Friends Live from the Fabulous Fox Theatre In Atlanta, a DVD/2-CD collection that will be released on May 4.  The collection was recorded at Zac Brown Band’s sold-out October 2009 show benefiting Athens’s historic Georgia Theatre.

Pre-orders for Pass The Jar… are available now and all purchasers will receive a special code to access presale tickets for ZBB’s show in Atlanta, GA on May 8.  Tickets go on sale to the general public this Friday, March 12.

Nothing says Irish, quite like the Potato.  It's the food of Ireland and it shows in all Irish folk food.  Here's my take on a classic from the kitchens of Ireland.  Shepherd's Pie.

Ingredients

  • 2 pounds potatoes, such as russet, peeled and cubed
  • 2 tablespoons sour cream or softened cream cheese
  • 1 large egg yolk
  • 1/2 cup cream, for a lighter version substitute vegetable or chicken broth
  • Salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 1 3/4 pounds ground beef or ground lamb
  • 1 carrot, peeled and chopped
  • 1 onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef stock or broth
  • 2 teaspoons Worcestershire, eyeball it
  • 1/2 cup frozen peas, a couple of handfuls
  • 1 teaspoon sweet paprika
  • 2 tablespoons chopped fresh parsley leaves

Directions

Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.

While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

Here's another fun one for you to try in honor of your Irish heritage...Ever bake with Beer?  I love my mom's Beer Bread!  And here's another crazy beer baking recipe using beer... And chocolate!  How can this be any better... Well when I use my "Death By Chocolate" homebrew!  But that's another topic.  Enjoy!

Ingredients

  • 3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
  • 2 cups sugar
  • 2 cups all-purposeflour
  • 1 teaspoon baking soda
  • Pinch fine salt
  • 12oz Guinness
  • 1 stick butter, melted
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • 3/4 cup sour cream
  • 1 (8-ounce) package cream cheese, softened at room temperature
  • 3/4 to 1 cup heavy cream
  • 1 (1-pound) box confectioners' sugar

Directions

Preheat oven to 350 degrees F.

In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda, and salt.

In another medium mixing bowl, combine the stout, melted butter, and vanilla. Beat in eggs, 1 at time. Mix in sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture.

Lightly grease 24 muffin tins. Divide the batter equally between muffin tins, filling each 3/4 full. Bake for about 12 minutes and then rotate the pans. Bake another 12 to 13 minutes until risen, nicely domed, and set in the middle but still soft and tender. Cool before turning out.

 

To make the icing:

In a medium bowl with a hand mixer, beat the cream cheese on medium speed until light and fluffy. Gradually beat in the heavy cream. On low speed, slowly mix in the confectioners' sugar until incorporated and smooth. Cover with plastic wrap and refrigerate until ready to use. Icing can be made several hours ahead and kept covered and chilled.

Top each cupcake with a heap of frosting and dust with cocoa.
